A simple chili oil you can make in minutes. Pour hot oil over spices and let it do the work. Adds heat and depth to almost anything.
INGREDIENTS
• about ⅓ cup chili flakes (gochugaru or similar)
• 1–3 dried chilies (optional, for more heat)
• a spoonful of sesame seeds
• a pinch of salt
• about 1 cup neutral oil (avocado or grapeseed)
Optional:
• 1 cinnamon stick
• 1 star anise
• a few cloves
• a couple cardamom pods
METHOD
• Add chili flakes, sesame seeds, salt, and any spices to a heatproof jar
• Heat oil in a small saucepan until hot but not smoking (about 5–7 minutes)
• Carefully pour hot oil over the spice mixture — it should sizzle
• Let cool completely

• Adjust heat with different chili flakes or more dried chilies
• Toast spices beforehand for deeper flavor
• Add garlic or ginger for a more savory version
• Let sit 24 hours for a stronger infusion
